Summertime brings outdoor fun, warm weather and good food. Kids enjoy all of these things so why not have them make the dessert for the family picnic or reunion or summer celebration.The best part of this dessert besides it’s delicious taste is that it does not involve heating up the house to make it!
This dessert holds it’s form nicely in the summer heat but it still needs to be kept cold. As delicious as it is though, you shouldn’t have to worry about it not getting eaten all gone. Relax, chill and let the kids do the work. (You may have to help them with the hand mixer though if your kids are quite young. The older kids just need to be supervised.)

NO-BAKE PEANUT BUTTER CHEESECAKE DESSERT
1- 12-14 oz. package of chocolate sandwich cookies (or Oreos)
6 T. melted butter
Between two sheets of waxed paper, crush the cookies and place in a medium size mixing bowl. Pour in melted butter and combine cookie crumbs and butter until crumbs are completely coated. Press into a 13 x 9 in. butter coated baking pan.
2 – 8 oz. packages of softened cream cheese
1 can sweetened condensed milk (Eagle Brand is always a good choice)
3/4 cup peanut butter (creamy or chunky, your choice)
1 – 3 oz. package white chocolate instant pudding mix (vanilla works too)
3/4 cup milk
1/2 cup white vanilla chips or peanut butter chips
1/4 cup mini chocolate chips
Beat the cream cheese, sweetened condensed milk, peanut butter, pudding mix and milk together in a large mixing bowl until creamy. Mixture will be thick but should be spreadable; if not, add 1-2 tablespoons of milk until it is.
Spread this mixture over the cookie crumb crust.
Top with vanilla/peanut butter chips and mini chocolate chips.
Refrigerate at least 3 hours.
That’s it. Your mouth will water for more after you take the first bite. Remember to tell the kids that clean up is part of cooking and creating and maybe help them with that chore.
